Everything has been said about Twin Peaks, back on TV after 25 years with a new event season compose of 18 “pure David Lynch” episodes. I’ll be waiting till the last show to try and figure out what happened, in the mentine the advice is to make a lot of black coffee and a bunch of cherry pies! Lucky you, I know the Double R Diner recipe, so perfect to make Agent Copper esclaim: “A damn fine cherry pie!”.

Title: A Damn Fine Cherry Pie

Cast (of ingredients 🙂

For the filling: 3.5 pounds of cherries, 1/2 cup of sugar, juice of 1 lemon, 2 spoons of cornstarch, 1 egg, brown sugar.

For the pie crust: 2 cups of flour, 12 spoons of butter, 10 spoons of iced water, a punch of salt.

INT. DOUBLE R DINER — 30 MINUTE BEFORE

To be sure to prepare a perfect dough cut the butter into cubes and put it in the freezer for thirty minutes with flour, water and the mixer’s blade This passare is important because low temperature helps to mix flour and buttar to perfectiont, therefore try not to tight the dough with your hands because their warmth can melt the butter.

INT. DOUBLE R DINER — KITCHEN

Mix for thirty seconds flour, salt and butter then start adding four spoons of iced water. Check the consistency (which will always look like flour with cold and hard pieces of butter) then keep adding water till when you pinch some of it it will stick together. It depends on the flour and butter you used, but it should take 10 spoons overall. Trying not to touch the flour with your hands to much, because it will melt the butter, spoon it in a bag and work it till it becomes a ball.
Put in the bridge for at least one hour.
INT. DOUBLE R DINER — IN THE MEANTIME

Wash the cherries and remove all the pits with a cherry pitter: it’s a real Twin Peaks experience since you’ll drip bloody red juice all over the place 🙂

Cook them in a big pot with the sugar till they will release their liquid and they will be a little mashed (it will take 20/25 minutes). Before turning off the fire, mix in a mug the lemon juice with the cornstarch and add to the cherries. Mix well and let cool.

INT. DOUBLE R DINER — FOR TWENTY MINUTES

Before rolling the dough, let it rest out of the fridge for twenty minutes.

INT. DOUBLE R DINER — A FEW MOMENTS LATER

Dive the dough into two parts. Roll the lower pie crust and put it in a buttered pie shell, fill it with the cherries and cover with more pie crust. Make some cuts on the top to let the steam out, brush with egg or milk and sprinkle with brown sugar.

INT. DOUBLE R DINER — IN THE OVERN FOR 35/40 MINUTES

Bake in a preheated over at 400F for 35/40 minutes. Let cool and serve.

Of course the pie has to be served with a nice “cup of coffee as black as moonless night” just like the FBI Agent Cooper would love.

Moreover director David Lynch himself says it is one of the fondamental steps to prepare to watch the season thought as a 18-hour long movie: “It would be better to have time and not to be interrupted” he said “be in a dark room with coffe or vin rouge have a good sound and good images, then the vision will be a real experience.”
